Sweet, light, with a tang of bleu cheese and balsamic, olive oil and cracked pepper. This delicious kale salad is a beautiful balance of sweet and savory, thanks to Flavor Hunter Dennis St. Germain. One thing you can count on from Dennis is that once he is on to something in the kitchen, his excitement and enthusiasm skyrockets in a contagious splendor! That was certainly the case as he put together this beautiful salad. It’s simple to make and delicious to eat. Here’s what you’ll need!

INGREDIENTS (Serves Four):

  • Kale salad6 cups of Kale
  • 1 cup Yellow Grape Tomatoes, halved. (Substitute red if you like, but the yellow really pops against the grapes!
  • 1 cup Seedless Concord Grapes, halved.
  • 3/4 cup Crumbled Bleu Cheese
  • Balsamic Vinegar and Olive Oil as dressing to taste (make it yourself! I keep it simple – two parts olive oil to one part balsamic)
  • Cracked pepper to taste.

I love a recipe that is as simple as assembling the ingredients list and putting them in a bowl – and that’s what this is.

In a large bowl, lay down from Kale, (I like mine hand shredded into smaller bites, and it’s often already bagged that way in the store.) The rest is pretty simple – halve the grapes and yellow tomatoes and place on top of the kale. Layer on the bleu cheese. Time now for the dressing, add what suits your taste. Top off with cracked pepper. Once it’s time to eat, go ahead and toss it… but before that time, it looks like a beautiful display of color and flavor as it awaits your guests’ digging in!
